We hadn’t made lamb burgers in ages so we ventured to the local butcher and bought some ground lamb today. These burgers, courtesy of Cat Cora are fantastic. The lamb is mixed with finely chopped kalamatas, scallions, feta and panko before they’re grilled. We top them with lettuce, tomato, red onion and homemade tzatziki. To serve, we make Bobby Flay’s orzo salad. Orzo mixed with red/yellow peppers, feta, kalamatas, scallion, dill in a lemon vinaigrette. They’re huge so we only ate half of each of ours but they were FANTASTIC. And we have enough salad to snack on for a few days. Life is good. 🙂
